MADRID FOR FOODIES ( I )

We totally agree that Spain is very famous for its gastronomy, but Madrid beats any place in the world, now it gathers the largest number of Michelin Star restaurants and chefs

One of the last appointed in the city was the famous indian chef Atul Kochhar with his restaurant Benares

#Benares is a must if you are visiting our city,  it is located in Chamberi district. Reservations must be done in advanced

For those who can not be in Madrid tasting this unique experinece, we copy the récipe of his tomato chutney, published by “The Guardian”

Tomato chutney

  • vegetable oil
  • 1 tsp chopped ginger
  • 3 tbs chopped onions
  • 250g chopped tomatoes
  • 1/2 tsp red chilli powder
  • 1 tsp salt
  • 2 1/2 sugar
  • 1/2 tsp nigella or cumin seeds

 

Heat 1 tablespoon of vegetable oil in a pan, and sauté the chopped ginger and chopped onions until translucent. Add the chopped tomatoes, red chilli powder, salt and sugar. Cook the mixture until the tomatoes are melted to form a sauce consistency. Blend the mixture with a hand blender and pass through a fine sieve. In a separate pan sauté the nigella or cumin seeds in 2 tablespoons of vegetable oil and add to the sauce and mix well.
